I have created the quiz and assignment and published it but it doesn't show up under modules? Some of them do and some don't but the only way they can view it in student view is under assignment or quiz, but I want it to show up under the modules so its more organized. Any suggestions?

Even if you created an assignment (via the "Assignments" index page) or a quiz (via the "Quizzes" index page), that does not automatically add those things to the "Modules" index page. You need to add them to the "Modules" index page manually. To do this, you can follow the steps outlined here:
How do I add course content as module items? - Instructure Community - 1157 (canvaslms.com)
